- 4 cups lettuce
- 1/2 cup strawberries, sliced
- * 1 sprig of fresh mint
- 1 ounce walnuts, chopped
- * 1 ounce goat cheese or feta
- 1 pinch black pepper
- For the Maple-Balsamic Dressing
- 2 tablespoons balsamic vinegar plus one teaspoon
- 1 tablespoon maple syrup
- 2 teaspoons soy sauce
- 1/3 cup olive oil
Prep Time: About 10 minutes
Instructions:
- Combine the lettuce and strawberries and optional mint, nuts and cheese in a large bowl.
- Prepare the vinaigrette: combine all ingredients in a small jar with a tight-fitting lid and shake well, until the dressing is well mixed and creamy in texture.
- Pour the vinaigrette over the salad, finish with a grind of fresh black pepper and enjoy!
- You can use strawberries, raspberries, or blackberries for this festive salad.
- Refrigerated, the Maple-Balsamic salad dressing keeps well for up to a week. Make a large batch and keep on hand for quick salad courses.
