Instructions:
- Combine the lettuce and strawberries and optional mint, nuts and cheese in a large bowl.
- Prepare the vinaigrette: combine all ingredients in a small jar with a tight-fitting lid and shake well, until the dressing is well mixed and creamy in texture.
- Pour the vinaigrette over the salad, finish with a grind of fresh black pepper and enjoy!
