Foodie fried rice is a healthy and flavorful dish that can be as exotic or simple as you like. You can garnish it with so many optional extras that no two batches end up tasting the same. We like to start with a base of white or brown rice and load it up with caramelized onion, crispy carrot, a bit of garlic, and ginger.

Prep time: 10 minutes
Cook time: 20 minutes
- Steam rice for 10-15 minutes until cooked (30-40 mins for brown rice.) Alternatively, you can use a rice cooker.
- Meanwhile, cook the well beaten eggs in a teaspoon of oil in a medium-size frying pan, chop them up with a spatula or knife, and put them aside.
- Sauté the onion in vegetable oil until light golden brown and well-cooked. Add diced carrots and sauté until seared on the outside, but still crisp. Add frozen peas, rice, garlic, and ginger.
- Pour on soy sauce and stir the mixture until rice is coated with the sauce. Add the cooked egg and serve hot. Optional: Garnish with chopped parsley or green onion.

I made this rice dish again...This time I added chicken sausage (sweet), without the casing...increased the garlic and it was terrific! Feel free to add what you like to this dish as it has a proper base from which you can create a special meal... A pad of butter added extra taste to the brown rice. This meal was delicious and a plus for leftovers.

Finally! Fried rice that’s super easy and flavorful. I’ve tried so many fried rice recipes over the years and I’ve never found one worthy of a second try. This one definitely is. With two kids at home, I’m usually on a time crunch for dinner so I cut some corners and bought many of the produce pre-chopped for this dish. Saved me a lot of prep time. Kids loved it, I loved it.

This was easy to make and of course delicious. A go-to side dish and even a go-to meal... I made extra rice so the meal would have extra leftovers.
